If I used a bleach kit, would I be able to dye over it immediately after?
I have medium-brown hair (a little like my avatar), and have tried to go lighter with at-home kits. The result was a lot of brassy tones. I don't mind some brass, but it was just too much. If I were to use a lightener to go very blond, then color over with the color I want, would that work?

No, don't go lighter to then dye over it. You need to go to a professional salon and have it done. You can't keep processing your hair, it'll get really damaged-- you might have already noticed? and the blonder you do, the more damaged your hair will get. Try something like Nice n' Easy to get a little lighter color, with built in highlights... That might give you what you're looking for.
But you can't avoid brassiness without going to a salon-- all at home kits will give you brassy blonde. Even if they claim platinum.

Edit: Sophie says her hair is "coarse"-- that's damage, from bleaching. Trust me, I've been every color in the book. I could not regret being platinum any more than I do. My hair has never been the same... and I've processed over and over in a short amount of time like you're thinking about doing and it's just not a good idea-- you really can't reverse the damage...
